Ingredients:

  • 2 large nori sheets
  • 1 cup sushi rice, cooked and cooled
  • 1/2 cup cucumber, julienned
  • 1/2 cup carrots, julienned
  • 1/2 avocado, sliced
  • 1/2 cup cooked shrimp or tofu, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame seeds
  • 1 tablespoon pickled ginger (optional)

Kitchen Tools Needed:

  • Bamboo mat (optional)
  • Knife
  • Cutting board

Instructions:

  • Lay a nori sheet on a clean surface or bamboo mat, shiny side down.
  • Spread half of the sushi rice evenly over the nori, leaving a 1-inch border at the top.
  • Layer half of the cucumber, carrots, avocado, and shrimp or tofu on top of the rice.
  • Drizzle with soy sauce and sprinkle with sesame seeds.
  • Carefully roll the nori away from you, tucking in the filling as you go, until you reach the border.
  • Seal the edge with a little water and repeat with the second burrito.
  • Slice each burrito in half and serve with pickled ginger if desired.
