- 2 large nori sheets
- 1 cup sushi rice, cooked and cooled
- 1/2 cup cucumber, julienned
- 1/2 cup carrots, julienned
- 1/2 avocado, sliced
- 1/2 cup cooked shrimp or tofu, sliced
- 2 tablespoons soy sauce
- 1 tablespoon sesame seeds
- 1 tablespoon pickled ginger (optional)
Kitchen Tools Needed:
- Bamboo mat (optional)
- Knife
- Cutting board
Instructions:
- Lay a nori sheet on a clean surface or bamboo mat, shiny side down.
- Spread half of the sushi rice evenly over the nori, leaving a 1-inch border at the top.
- Layer half of the cucumber, carrots, avocado, and shrimp or tofu on top of the rice.
- Drizzle with soy sauce and sprinkle with sesame seeds.
- Carefully roll the nori away from you, tucking in the filling as you go, until you reach the border.
- Seal the edge with a little water and repeat with the second burrito.
- Slice each burrito in half and serve with pickled ginger if desired.
